• 3 pk frozen spinach
  • 3 tbsp butter
  • Salt, pepper, and nutmeg to taste
  • 1/2 – 1 cup crumbled feta cheese
  • 2 tbsp toasted pine nuts, optional
  • 2 sheets puff pastry

Defrost spinach and squeeze out excess water.  Melt butter on medium heat.  Add spinach and saute 2 minutes, or until heated through.  Add spices, nuts, and cheese; mix well.  Grease a 9″ pie pan (glass works best if you have one), and line with 1 sheet of puff pastry.  Fill with spinach mixture, and top with other sheet of puff pastry.  Fold sides of pastry to seal.   Bake at 400 for 20-25 minutes until pastry is golden brown and crispy.  Enjoy!

  2. Hmm, I strongly prefer frozen spinach to canned. I know fresh is supposed to be best but it’s too much of a pain to take apart all those leaves!

    I guess it looks more macho for popeye to open a tin can with his bare hands than a paper box or plastic bag of Green Giant.

  3. this stuff tastes good, but i must admit i love spanakopita mostly for it’s name. SPANAKOPITA!
    i once went around saying that all day long. =)
