- 3 pk frozen spinach
- 3 tbsp butter
- Salt, pepper, and nutmeg to taste
- 1/2 – 1 cup crumbled feta cheese
- 2 tbsp toasted pine nuts, optional
- 2 sheets puff pastry
Defrost spinach and squeeze out excess water. Melt butter on medium heat. Add spinach and saute 2 minutes, or until heated through. Add spices, nuts, and cheese; mix well. Grease a 9″ pie pan (glass works best if you have one), and line with 1 sheet of puff pastry. Fill with spinach mixture, and top with other sheet of puff pastry. Fold sides of pastry to seal. Bake at 400 for 20-25 minutes until pastry is golden brown and crispy. Enjoy!
